Apple Lettuce Salad

Apples and lettuce pair up in this colourful and crunchy salad. This sweet and tangy dressing coats the apple nicely and prevents the apple from browning.
Ingredients
- 100g Torn Lettuce Leaf
- 1 Small Unpeeled Crunchy Apple
- 2 tbsp Feta Cheese
- 12 Walnuts
- 2 tbsp Lemon Juice
- 2 tsp Sugar
- 1/8 tsp Pepper
- 1/8 tsp Salt
Method
- Pour 1 tbsp lemon juice onto plate and slice apple into thin wedges, immediately transfer to plate.
- Grind walnuts until coarse.
- In a small bowl mix lemon juice, salt, pepper and sugar. Stir until sugar has fully dissolved.
- In a salad bowl, combine lettuce, walnuts and toss with the lemon juice dressing just before serving.
- Arrange the apple wedges along the sides of the salad bowl.
- Sprinkle walnuts and feta cheese over the salad
Zesty Orange Lettuce Salad

Ingredients
- 100g Torn Lettuce Leaf
- 1 orange, deseeded and peeled into wedges
- 1 tbsp orange marmalade with the rinds
- 1/2 tbsp balsamic vinegar
- 1/8 tsp pepper
- 1/8 tsp salt
- 1 fistful of roasted sunflower/pumpkin seeds
Method
- In a small bowl, mix the orange marmalade, vinegar, salt and pepper.
- Pour over the lettuce and pumpkin seeds and toss.
- Carefully add the orange wedges in so that they do not break.
- Sprinkle a few pumpkin seeds and serve.
Egg Mayo Lettuce Salad
